Roasted Tomato Hummus is the perfect appetizer or snack to make anytime! Why buy store brought when you can make your own, it's that simple! Make this recipe and serve it with a homemade pita/naan bread or with chopped fresh veggies!
Here's What You Need:
4 tablespoons extra-virgin olive oil, divided
2 cups cherry or grape tomatoes, rinsed and dried
1 can (14.5 oz) garbanzo beans, drained and rinsed
1/4 cup tahini
2 tablespoons lemon juice
1 teaspoon smoked paprika
1 teaspoon red pepper flakes
2 pinches salt and freshly ground pepper
3 cloves garlic
Let's Cook It:
1. Preheat oven to 400°F. On a baking sheet, toss the tomatoes with 1 tablespoon oil, garlic cloves, the paprika, and a pinch of salt and pepper. Roast 15-20 minutes, until tomatoes have wilted.
2. Remove from oven
3. Transfer everything on the baking sheet (except the tomatoes) to food processor, add the garbanzo beans and pulse a few times
4. Add the tahini, lemon juice, remaining oil (only add if it's too thick- 1 tbsp) and another pinch of salt and pepper
5. Pulse until smooth, 5 - 10 seconds
6. Add hummus to a bowl, add roasted tomatoes, red pepper flakes and drizzle remaining oil
7. Serve with homemade pita/ naan bread or veggies on the side for dipping
